I spent two years in Taiwan, meeting people from all around the world, including my husband. Other than the occasional day trips to Vancouver B.C., it was my first time out of the country, and it was an unforgettable experience. Looking back on that time, I know I could have done better and learned more, but it was still wildly eye-opening, despite my immaturity.
There were so many firsts I experienced while in this place where just about everything was new. From sights and smells to languages and foods, Taiwan was a gateway to East Asian culture that nothing could prepare me for. I also had unparalleled freedom, which means I made some questionable decisons that were again part of my learning journey. One involved a bottle of soju on a friend's rooftop garden on New Year's Eve. Soju is a sneaky minx, my friends. Have you tried it?
What makes a Strawberry Soju Slushie so awesome?
With the rise in popularity of Korean culture in America and the UK, it's only a matter of time until Soju is as common as BTS. This clear spirit, traditionally made from rice, and range in potency from 13-53% alcohol, so be aware of what you're drinking. It's quite smooth and can sneak up on you. But it's mellow flavor also makes it awesome to mix with fruit.
This Strawberry Soju Slushie tastes of fresh fruit with just a hint of booze. It's the essence of summer and a great way to keep cool in the heat. Of course, you could also mix in other fruits in addition or instead of. Watermelon is an awesome choice, but raspberries or even mango would also be awesome. The principle is always the same. Just make sure you have plenty of ice on hand to keep your slushie thick and frozen.

- Sugar - can be adjusted or replaced with other sweeteners, depending on how sweet your berries are and how sweet you like your drink
- Water
- Soju
- Ice
Tips for making a Strawberry Soju Slushie
Making this drink really couldn't be simpler, you're basically chucking all your ingredients in a blender and cranking it up until smooth. You'll want to give it a taste to see if it needs a bit more sugar. You can always add, but you can't take it out, so hold back at the start. You may also need to adjust the ice of water level to get the slushie thick but drinkable.
And if you want it extra potent, you could up the alcohol content as well. Basically, nothing is fixed here. Just play around until you get something that tastes awesome to you. The only thing you have to have is strawberries, soju, and ice. The rest is down to personal preference.

Ingredients

- About 1 cup frozen strawberries, roughly chopped
- 1-2 tablespoons sugar, depending on how sweet you like it
- ¼ cup water
- 2 ounces soju
- About 1 cup ice
Instructions
- Put your frozen strawberries, sugar, and water in a blender and blend until smooth.
- Add soju and ice and blend until the crunching noise gets quieter. You may need to add a bit more liquid to make it a pourable consistency or a bit more ice to thicken it up.
- Pour your slushie into glasses and enjoy.
